Nachos

One of our original 15 minute meals, plus another 15 minutes to bake at 400, and easily devoured in 15 minutes.

Bottom layer: your favorite tortilla chips. Then a liberal layer of shredded cheddar jack or Mexican 4 cheese blend.

Then: a can of black beans or jalapeno refried beans from Trader Joe's if you don't have a 2 year old who says, "Too 'picy!" if you feed her something that is indeed, too 'pciy for her toddler tastebuds. Add diced tomatoes, white onions, green onions, green olives, and dump on more cheese.

It's easy to add some cooked ground chicken or turkey if you want more protein but I like this as a Meatless Monday type dish. Smaller carbon footprint. And unlike certain chili recipes, smaller methane buttprint too.
