Only instead of tomato sauce, it's fish sauce, aka nuoc mam. And the 'pasta' is made from rice flour, speckled with bits of dried shrimp and green onion embedded in the sheets of noodles. You tear the sheets apart and soften them by warming them in the microwave. Then top with thinly sliced minced pork sausage, blanched bean sprouts, and shards of mint and basil. Sprinkle with some fried onions and drench in spiced nuoc mam. "Banh cuon" beats oatmeal for breakfast any day.
